When people think of German wine nowadays they tend to think of Riesling, but until the early twentieth century Elbling was the most widely-cultivated variety in Germany. Nowadays, it is rare to find a wine that is one hundred percent Elbling.  Like Txakoli and Vinho Verde it has a touch of effervescence, and this Trocken style from winemaker Matthias Hild is bone-dry with vigorous acidity.
